Little Willow X Beyond IPAs Collab

In this episode of Beyond IPAs, the hosts visit Little Willow Brewing in Oxford, Connecticut, to celebrate the release of a collaboration DDH New England IPA named "On Air," brewed with Topaz, Galaxy, and Citra hops. They describe the beer as exceptionally fresh, with tropical notes, a creamy mouthfeel, and a refined color. Brewer Kyle Hume shares his approach to brewing, focusing on constant refinement, adapting to evolving consumer palates, and prioritizing quality and detail in every batch. He attributes Little Willow's growth to this mindset, evidenced by its recent win in a blind taste test that eliminated brand hype. The discussion also covers future releases from Little Willow, including a pilsner, Gose, fruited Berliner Weisse, and an Oktoberfest, showcasing Hume's experimentation beyond IPAs. The episode emphasizes the importance of judging beer on taste alone and supporting craft breweries that consistently innovate and maintain high standards.

Welcome to Beyond IPAs, a podcast dedicated to New England's amazing craft beer community. We appreciate you joining us as we converse with the incredibly talented craft brewers who craft up that liquid poetry that we love so much. As well as the many interesting people that are part of our craft beer community. So sit back, relax and join us as we enjoy our fine local craft brew and learn a little something. Cheers. Hello, welcome. Nice, nice garbage truck to speed dance. Our fans have come out. Yeah, they've come out. Dude, we are, let's fucking go. Here we are. This is a watershed moment for Beyond IPAs, yeah. So here we are. We're meant to stay. Oxford, Connecticut. Yep, deep in the woods, deep in the woods location. Sun is on our faces. It's a nice day. We are outside beautiful day. It brings us here. Yeah. Luce, you look good. I look okay. I know. Yeah, that's true. We have a special guest, Kyle Hume from Little Willow. You guys might have heard of him. We are here in Oxford to celebrate a fucking momentous occasion. Did a collab with Kyle, the Beyond IPAs podcast and Little Willow. I want to dig more into the collab aspect, but yes, but go ahead. We can dig into that. So we collab, the winds picking up. Little wind, yeah, I like it though. It's nice breeze. So let's just jump into it. Let's go around the table. I know what I'm drinking, but I'm going to tell everyone. I am drinking a Little Willow on air, D-D-H, New England IPA with Topaz, Galaxy and Citra. Scott, you've got the same thing. Obviously. Obviously. Now, Kyle has already finished his. Kyle, welcome back to the podcast. You might have done this once or twice before. Rick, don't get mad. He just cracked it. What did you crack? A year round. Yeah, we have a year round here too. Yeah, and that was canned two days ago. On air is being canned as we speak. Yeah, what you're drinking is like. You can't get four minutes. Any more fresh than this. Now, I get excited about these things. And I'm going to try to stay in control. I've told Scott to kick me, tell me to shut up, whatever we have to do. Let's get into it. Okay. I'm going to gather my thoughts. Okay, set the stage. Okay, so, Kyle was generous enough to agree. To do a collab with us. So, I don't know how much to be perfectly honest with our audience. How much is this really a collab? Well, we had some say in the recipe. We went back and forth with the recipe and we talked about it. Really, this is Kyle doing what Kyle does. But I feel like we had some say in the name. Yeah, sure. And we worked at the hops. And I've never used the hops that you suggested. All right. We made a couple of recipe adjustments. There's more back and forth. I guess that's the reason. Some other plans are here. Right. So, yeah, you guys talked. I had nothing to do with it. I don't know. Well, you were on the trend. I was on the trend. But, yeah, I don't know. I can't really. But we're out here for canning day. Yes, you're for canning day. No, I know it is. I'll take full credit. And I feel like, so I'm the same way in text as I am on the podcast. I probably don't give you enough times to even respond. No. So, I just get excited. I get excited. And so, but Kyle still different than I am. But you guys, so you guys, I want to hear all about the hops and the hops. And the, you know, the, all right. Let's go to Kyle. Yeah. Kyle. Introduce the beer. Talk about the hops. Talk about the process. That damn garbage truck. He's probably mad. He's got nothing to pick up. He is. Yeah. Just drinking gold. Talk about it. Talk about it, dude. So, as we, as we went back and forth, we decided we really wanted to do a single IPA. Brian, I know you needed to have Galaxy in there. You're favorite. Alex and your favorite hops there. And then you guys chose Topaz, which is cool because I've never used Topaz before. Has a couple of different notes than I'm used to having in most of my IPAs. But I feel, I feel like I'm really, really good. A lot of Galaxy presence right now. I think that, I mean, it's off the canning line. Minutes. Yeah. And it'll definitely, it'll definitely mature into some more like big tropical fruit notes. And a big plush fruit note right off the, right off the aromatics for sure. So, I'm excited. It's got a little bite as we speak, right? It's a little tiny bite. And it's kind of mellow for sure. And you mentioned something when we first pointed about the color. Like so, color is. Oh, yeah. This is ridiculous. Yeah. This is really what I'm going for and what I've tried to achieve over as you said, as we had discussed earlier, over like the last year or so. I've been really trying to, um, try to really work on the color a little bit more. Um, and I feel like we're finally getting to where we need to be. Um, yeah. And I feel like I noticed the mouth, like the mouth feel the, it's creamy, right? It's, I like that, right? Yeah. It's like fluffy. Yeah. Yeah. It's, it feels huge in an experience of an annoying IPA. It's hard to get in a single too. Yeah, it is. And you did it. And you did it well. Again, I'll, I'll pat my back and our back for the podcast. You know, we probably, this is going to really launch little willow to the next. Yeah, really. I mean, yeah. No, but I did say so off air. I did, and then I said, Kyle, I'm going to talk about it. And it's not because I'm a huge little willow, haunch or like to blow smoke up his ass. This is the way I believe about it. And Scott, you said it too. When you go to, when you go to burn the ass or tamarack or wherever it may be, my, wherever maybe in your local retail, you're looking for a little world first. Yeah, you look for it. And there's a reason why. Now, I told Kyle, I see, you know, and he's been doing this now for a little bit. I felt like you came out of the gates running. And I don't know if it's ever really plateaued. Maybe for a little bit, but I feel like, and I call it in some folks that I close with and text with would agree. That in the last kind of year, maybe year plus, it's, it's really gone to the next level. And we've talked about it with you. And we know your attention to detail. And it's hugely important. And I feel like it's the reason why you just keep on climbing as opposed to plateauing. And you never rest. Talk about that a little bit about. When you create a beer, when you make a beer, when you send it to the line for brewing. And you just, again, you always talk about consumer. And that's so important to you. And of course it is, right? What's your thoughts here? Like, I mean, in the last year, just shooting up my words, not yours. Our thought was, oh, Kyle figured something out. He honed in on something. And we asked him and he was like, well, you go ahead. But it was like, no, like, I mean, what a little detail. So one, I always strive to make every beer better than the beer before. Rarely am I completely satisfied with how a beer comes out. There's always these minute details that maybe I wish, oh, you know, maybe I could have done this or this. And it's things that, you know, an average consumer maybe wouldn't notice. But because I'm so used to drinking these beers. And from all the years that I've been brewing them, I just kind of see those things. So I work on that, but I also pay attention to the palette shifts of the consumer. As being the consumer myself, I'm noticing where the palette goes and what people are wanting to taste at that time, I guess. You know, New England IPAs are not what New England IPAs were four or five years ago. IPAs in general weren't what they were four or five years ago. So it's like, as the palette shifts, I mean, my palette shifts was well. And it's like, I see things or I taste things or I even think up things. And I'm like, hey, I wonder, I wonder if I can make my beer more like this or more like that. And, you know, it would it would it add another dimension or just fine tuning things, just little details here and there. I'm pretty happy with where most of the beers are right now. So yeah. And you thrilled with the right. You say, I'm pretty, I'm pretty happy. You're crushing it and every metric. So, but I like that approach like that. You're not you're not settling. You're going to keep pushing it always. And I think we've noticed that with like the lot of brewers that we've interviewed, right? That seems to be the common thread between the real successful ones is that they don't pay attention to every detail and almost. And even at this stage, I still see every single untapped review. I still see every single review on Facebook. I probably liked it. If you've written a review, you'll see my name pop up. No, even if it's not, I'll just be like, hey, you know, but I don't know, I just still, I don't know, I want to make something that even I want to drink. I'm not going to just make the same thing over and over and over because that's what is the point in doing that? Why, why even do it? So I think you're probably more of a craft beer enthusiast than you are a business man. And, and which to be for sure. Which to me is why you're successful. When I get to learn all this business stuff, I was like, oh my goodness, this is amazing. And I feel like, honestly, that's what make good, we say it all time, good beer cells. And if you're going to make good beer, could be or you always have to tweak and adjust. And some of our favorites that we always talk about, they do that. And you're right there with them. And again, I'm not just here to pump Kyle's nads. It is more of just a, I'm pumping the fact that you make good beer that I fucking love. And that's important to me as a consumer. And I just have, we've created a vehicle to talk about it. And so I'm lucky to do that. But it's not just me. And we know, and on the group, it's a lot of people that really love this shit. And I'll give a shout out to David O'Linali, who's on the group. And in Kyle, I think you met him at the River House event we had. He loves it too. Like he is always saying, he's always, when I think of people that post on the group about Little Willow, he's always one that comes out, because I know he's always like you always grabbing it in retail. Just that's almost the first. It's the first thing. And if it's not there, I'm like, all right, now what's-- Yeah. I'll go for a-- Kyle, no, so Kyle was nice and often. You don't need to get into details, Kyle. It was nice enough to show me some pictures of what's up and coming. And we think of Little Willow as DDH, New England Haysies. And we love him. And we support him. And that's just great. We know you've done a stout. We know it was cemetery walk, I think it was. Which was great. We did a couple other ones earlier on. Those proud ones. Those proud ones. I think you got to untapped. Yeah. Yep. I'd love to-- no, just made me think of this now. I'm going to pause on what's upcoming. Let's talk about the Blind Beer Test. Oh, that's right. Yeah, that mass beer brothers did, right? Yeah. Those guys are great. Madfurd. Mass brew brothers. Madfurd Beer Hall. We see Dick 20. Yeah, Dick and Beer Hall. 28. We got to get there. 28 entrants. Wow, that's a lot. Rockound from Little Willow, number one. And I love the concept of blind taste test. Take away can art, take away reputation, take away labels. The hype. Take away the hype. Yep, good points. That wraps it all up. And just drink what you're drinking and rate it. Yeah. Well, we did this in your house. Yeah, we had a beer share. Yeah, we did. It was interesting. It was hard to tell who the maker, the brewer. So you're going on taste alone. But everyone says, oh, I know a trillion beer when I see one. I know tree house. And then none of them did. No, the only one that caught it was Patrick Swarris. Did Gnale was a congress straight that we might have had on that taste. He didn't know. I was a friend of my son. I was a brewer. I know. I got this. I've done my friend, another friend, Brian. He used to come over and he'd have something like a brown paper bag and we'd do the same thing. He'd be like, go and drink. Go in the liver for a while. Yeah. So I go in the liver and come back and there would just be like five cups. That's what? And under each cup was like a number and it corresponded to a can. Yeah. One of the times incorrectly identified my own beer. Yeah, right. I was like, I know my beer. Yeah, I know my beer. I was like, oh, shit. So like, you didn't know on YouTube. You wouldn't know. Yeah, I did it. I did it with Fiden's Jasper. When Fiden's did the 14 brewers, can make Jasper. And he has it. I did it with three Jasper's. Freak foe. That was fun. That was good. That was fun. That was good. Freak foe would have made it. I didn't hurt the other one. Yeah. So it was. Yeah. It'll come to me. But I love doing that because take away all the hype as you said Scott. Yeah. And just taste the beer. No, I think it means a lot. Well, in terms of like, we need to recognize it. We don't we don't know what you think you know. We don't really know. Yeah. And so go on taste alone. Rock count. And if you haven't had it again, I could get tired by saying it. Go get it and drink it. It's a fantastic brew. Most people know rock count was one aquatic was second, which is interesting because I don't think people found with. People don't really know too much about aquatic. They're not a huge social media presence. Go get down there. But they make good beers and Kyle, you send it off here. Like they do stuff. Yeah, they do. I was there when they opened and I've gone several times. Yes, you camp down there. And so you probably go every time you get out. Which is great. Like I love it. Like give these people. Look it up. Look it up and find the beers and just give those people shout outs because to me. You know, I see a tree house beer and a tree house label and I love tree house. But I don't want to go on reputation or what it may be. Sure. I want to go on once in the cup. But I almost feel like I see I don't. I don't. It doesn't matter if you're not first to last. If you're not first to last. First to last, right? That's what Kyle was first. But anyway, great event. It came back after I ate us. You know what you did and I told you. Cambridge Broome Company used to win that like they won't like three like the last three years. They would they would win it. Now I think they're going out of what they sold. I don't know. I think you're going to see them come back in some capacity. But anyway, yeah, Cambridge. That was about like six years ago. You're talking so you're talking like what they have like flower child. Yeah, I think it was flower. You might have been flower. Those beers were fire. I remember going to that. I went to their curry a couple times and I was like wow. This year is so much different than anywhere else around right now. I say it all the time. It's like what's new? What's it what's interesting? And I say it about my flow. Visit may flow may flow still makes good beer. And I just feel like the OG some of the OG's have been around for so long. People like, ah, I've been there had that. No good breweries that stay in business are always tweaking and making adjustments. And go try their beers. Like don't just give up on someone because they've been around for five years, ten years and whatever it may be. Love it, love it. Going back to what I've originally started before I remembered my thought. What's coming up Kyle? What's coming up a little willow? You've got ideas. I know the last time we talked last time we talked. I just cracked a year round. This badge is really good. Yeah, yeah. So this is what it is. I love it because you know last time we were on you said, you know, we're going to always make our, you know, our quarterlies. But you're going to experiment more this year with hops you haven't used. Yeah, of course. And you're going to even get into some beers that you may not have brewed in the past. So talk about what's coming up for a little willow. Well, we've got the Brian Watson will go quarterly release. Don't have a bit, don't pump his tires. It's all about that. He's going to take full credit for it. Fucking really good drinks. I mean, that one will just, it'll be around here in there. Citro-Calixty Recal. Yep. That's you, Jam. That's my jam. I do see that. I'm like, okay, Don. Yeah, it's so good. So good. Anyway. Yeah. So we're going to be doing the anniversary of Hazy Days as usual. Beach Cormor will be back. I know a lot of people that's their favorite beer. Bernie is going to be happy to hear that. He heard a lot of people request that. Bernie needs a little leg plan on that one. I will, I will have a pilsner coming out soon. Let's see what else. We've got a couple of hours coming out. We have a goza this year. I was going to say, talk about your sourced a little bit. You're doing a gozae. Yep. Gozae is that? Gozae. Gozae. Gozae and people bounce at the same time. Come on. Well, hell is hell. What do we do? What do we do? It is what it is. You bounce at the way you want. That's a great about craft beer. Sorry. Go ahead. So yeah, I'm going to experiment a little bit with a goza this year. I'll do some fruited biliner vice. That'll be the soures this year. What about that? Just so it's like, you know, soures that are a little bit thinner. I got the tart. You got the fruit. It's easy to jam. Yeah, not jammed with the, you know. Listen, there's a place for it. There's a place for it. And that's also, I mean, that's its own skill. Sure it is. You know, I've played around with recipes with that stuff. And I have not gotten the results of some of these people that are doing it well. And if I can't do it, at least as good as the people that are doing it well, then I'm not going to do it. For $450, like they just jam it with the fire. Well, I mean, you got tracker out there. Yeah, yeah, yeah, yeah. Trackers. You know, there's so many that are just, they're so, they're done so well. Thick. And I don't know how they afford all that fruit. It's like, I don't know if you know fruit pure uprising, but that must be insane. You're insane, yeah. I like it. But more power too. And they're doing it right. And people, you know, Kyle, people are trying to like replicate what you do with IPAs. Right. So, you know, no, but I like that. That's who you are, right? Like you're, you're double dry out, right? Double dry out, right? You want to, you want to perfect this? Yeah, but if I can't do it, I'm not going to expect a consumer to buy it. Yeah. And be like, no, this is good when I know, no, it's not what it's supposed to be. Yeah, it is. You're not going to put it out. But these burliners, I would have been brewing burliners for so many years. So I'm excited for those that goes as real special to me. They'll be a little story with that when that releases. I'm doing an October Fest this year, German style. Nice. So that's something. Yeah, I'm super into. Like you're doing a Fest beer, a monster. Yeah, with like a lot of Munich mall. Yeah, the whole thing. That's exciting. I love that style. Yeah, yeah, yeah. I love that. Cemetery walk will be back this year. Oh, very good. That was been doing very well. That one, that one hit. I think people enjoyed that. That was a great style. It did really well. There's a couple things I'll tweak. You know, unfiltered, hoppy logger. Is that possible, Kyle? It's possible. I never really thought about that. That's my jam. It's up to fine. Maybe in the fall. Yeah. You're talking about like maybe a tuned in. Yeah, like that, but unfiltered. Sorry Kyle and that now we're taking notes. We're gonna press our own we did a collab with Red Hand brewing. Oh, yeah I saw that. Yeah, it was very good. It really was. It really was. I was kind of a yeah I really was friends at Red Hand really knocked it out. Yeah Brian Dave. You know wonderful. We cleaned out that we actually did actual work Yeah, we did actually work on on We did we did we did a lot of raking of of hops of you know grains and it was funny. It was a good time Yeah, good beer. Matching out is fun for like three times. Yeah, but the worst you show Like we were all kicked out. We were like, yeah, we're making beer, you know What style of beer was it that you're good? It was we called it a hoppy logger. Yeah, I was a hoppy logger Very good. It looks like an IPA when you when you picked it up and when you smelled it The I think over time it did it did kind of drink it. You like oh, that's that's a lot. What I was kind of what huh? Citroe. We didn't sit true. Oh, yeah, yeah, yeah, yeah, so job. Awesome. Yeah, we enjoyed it. Yeah, really good Yeah, go down and go down and check out as we always say go to Red Hand some friends and love it He always cares little will it so he does always supports the man. I love it. I In kind of like I Say this you all the time every time we have you on off air. We talk text we talk I appreciate you so much. You've always supported us and we've always supported you and it's it's always been fun and You gave us an opportunity to hear to collaborate and and do what we both love and and that's awesome to me and yeah This has been about us that folks that know me and and well enough like this Charges my beans. There's no question. It's my beans Fucking love this shit and if I could do it for a living I would fucking do it. It's I get excited by this and It's you know what call me a hype guy call me whatever you want. I'll do it And again good beer cells and I'll fucking always be out here Sit in the sun with the man like this that knows what the fuck's going on. Yeah, I love it But what so so here's an idea I've been having right about here we go You know we can so I'm gonna throw it out there and hope no one steals it But I want it. I want to do like a like a Beer with a brewer right so person goes gets Will go or or blue comment or whatever the the one you can always get right you right the Slack shit right maybe we interview the brewery so okay tell us about that beer right tell us about the hops tell us about the green bill Right like and then nuances details and then it's sort of evergreen content on YouTube where people can Say okay I have a blue comment. I'm gonna. I'm gonna watch that three-minute video with the brewer and you are interviewing Brian and They're just telling you about what you're actually drinking so you're hearing about it and you're actually Experiencing it and you're learning a lot about beer at the same time. Yeah, it's just a short little snippet Sure, right and it's and it's just I don't know I think it's it I Think it combines the the podcast audio with the actual experience of drinking beer and it's like that's cool That's really good. I made it. I like that. All right. Let's start that right here. We're gonna do that right now We're starting it right now, but let me tell you the reason why people need this okay with the challenges in Craft beer and the amount of craft beer that's available. Yeah, and when people go into a retail store and they look at this Wall of can art. They don't know what if you're not a Crazy crafty you to may not know what you're buying you may not know what You're doing necessarily so you always just reach for the sip of sunshine or something that you know I see people in the grab and like no worm town or something. No, no, no, no, no, I know I don't I say something And nothing against word town I appreciate what I'm gonna be hobby any day. Yeah, well, I will actually but you know what I'm saying like no Yes, like I do something do something different because you may it may blow your mind right And so I think your idea is valid and needed okay, especially in this thing now for brewers I also think it's needed because we've talked about this in the past two There are so many different options in the market nowadays you want to talk about when we've talked about it THC Celts is regular celtis mocktails cocktails like can you do it? We know from trillium trillium as as a distillery trillium makes these canned cocktails Yeah, and so there are so many options for a consumer but wait a minute don't lose sight of the effort and the meticulous attention to detail that goes in the craft beer because to me And when I and I'm telling you it's not just because it's our collab but on air out of the tank in a canned for four minutes when I cracked it And I said it to you Scott when you drank it. I said that was a big step for you I'm like you but I did the same thing I couldn't put it down. Yeah, how's that? I can sit down so why you're already excited when the canning line? I'm walking around my beans or something My shoes my shoes are wet. I'll get sprayed with them with with on air I'm getting it's on me. I'm smelling my sleeve You don't want to get the detail or The auger sense is I don't know what's going on here, but I think your idea is but we need to execute so yes So I'll put up when I'm putting it out there As you know now sure drive us to do this but let's start right now Brian also let's say it's just real quick We start the the thing. I don't know if it's that they're trying to give you too many options as Much as it's they're trying to appease a larger group of people that have different tastes So not everybody drinks beer anymore. It's not as common as before great I don't know if they're trying to change the original person who likes beer I think they're just trying to appease the larger crowd so they can draw more people in but one takes from the other is One is my point. I think maybe if a person doesn't drink beer at all. Yeah, they might So I can make cells you might bring them in they've lost everything Well, that's what I think it's a point when you have a brick and mortar to do to do that Offer a celtzer offer a Gluten free beer whatever maybe this so yeah, yeah, it's something local you don't bring it all and so and so if you're if your husband is in the craft beer But you don't necessarily want to drink beer. Oh, but they have a celtzer. Oh, but they they offer wine Now I get it this licenses around offering you know, I get it. I know they're right 100% so I was in Rochester no I was in New York it'll come to me One of the breweries liquid state They actually offered a THC 0.05 percent it was a small but they offered a THC beverage I wonder if that's gonna as as we go with THC's yeah become a thing it become a thing because so so we gotta watch There's a there's the thing that was legal so that I know I'm asking it Yeah, so I have to see if it's we'll see if it yeah, okay, well they banned they banned the THC drinks Well, they're they're banning the hemp THC drink. Yeah, it doesn't go into a lot of delta nine Delta nine. I thought it was hemp. Oh Maybe it's just hemp but Delta nine is but that is him isn't it? Delta nine government government approval Is it? Brrrr We can buy it online. I don't know enough about I know but what I'm saying is it is it is it so let's teach those it offers Just a little extra so it gets you in the brewery and that's the point get people to come in to a brick and mortar So it's it's that that conversation will never go away and I'll never drop it because I think it's It's it's it's such a dynamic Conversation to have yeah, it's got that essence of craft like okay experimental try things What's do some they have to do you have to do there's so many it's so oversaturated if you don't offer a Reason to come then no one's gonna come yeah and variety Because everyone can have live music everyone can have the same food truck the junior local area Differentio but if you don't have something else whether it's like atmosphere or a nice wide variety of things to appease Anybody who shows up? It's gonna I would assume I mean I don't know personally. Yeah, I would assume you don't Make make my wife want to go there and I'm gonna be there a lot more. Yeah sure and let's go back And she's like oh, I like that I like that. That's else right. Yeah, I'll go with you They have one exactly right so it is important with brick and mortar to do that now Colle you have absolutely crushed in your space and I don't know what ever however you would want a brick and mortar because you're doing so well in this space like Contract brewing for you is just is is you're killing it and it's important that you know Brewers find their lanes and he's like anyway Take it over take it over I want to get back to back to that but okay, so let's try this we are we are building on the fly Right here experimenting with this concept. Okay Kyle. What's what are we gonna do you around your round subtle? Wonder you around is this is this something. Yeah, is this gonna be available year round Yeah, you try to be funny. Yeah, that was a gentle Dissrall you know they came they came to me one day and they're like why don't you have a year round offering? Yeah I was like oh and they're like yeah, you could just have like a single IPA you should do a year round offering I was like okay, so I put this recipe together and then it came down to naming it I was like, you know would be hilarious It is funny. Yeah, all right, so okay, okay, so what's pretend we're actually doing is real okay? We're here with with here with Kyle Hume talking about year round, right? Hey double dry hop new wing an IPA 7% Kyle tell us about this beer because the consumer probably has it in front of them right now and wants to know what are we drinking like what's what we what were you intending to do with this beer what should we know about this beer that that you want consumers to know about like like like talk us through this thing so what was your plan here my thought process on releasing a year round new England IP offering was to create something that was I guess along the lines of something neutral when you would consider a 7% new England IPA and the first thing that came to mind for me obviously was Citro hops yeah and then to do like a nice wheat oat kind of a good percentage in the in the grain bill there and just kind of give you a little bit of a mouth feel with a hop that's mostly used in doing a IPA is to give you the expression of what new England IPA should be yeah that that being Citro right yeah and that's the okay and with this beer I find it does the job excellent um you get a lot of peach you get a lot of uh you get a lot of grapefruit yeah and at the end you just kind of get a little bit of a citrus blend as it tapers off I don't find it to be offensive or too assertive I find it to be right in the middle of the road for somebody that might just want a regular IPA that's still a craft IPA that that this would be the the way to go so you're aiming for um the middle right right right the just the you're not going for that something extreme something that you know uh this isn't too this isn't quite the chase after the people that are chasing after the thing um but this is also not something that's just like some half ass attempt at an IPA this still is had there's been a lot of effort put into making this what it is but it's something that I feel like yeah most of the crowd can enjoy you don't have to love IPA is to still really love this okay so sort of a gateway yeah your gateway offering absolutely where it's a little more like introductory it's a little more um non offensive that's what I was going to say so so a brew a novice IPA drinker this would be a good kickoff beer this is listen this is what you can expect from a knowing the hazing you know and not to bring anybody else into the into the conversation but you know blue comment yeah they they they also they do an excellent job at kind of doing the exact same thing I believe they use simko and something else in there and comment yeah comment and simko maybe no it's not good to get this well whatever it is yeah I think it's an excellent example of a good year sure this like it like a flagship that that people can just rely on depend on and you know what you're getting and at 7% with haze in the color it is it is a good approachable beer okay so so so let's talk about like simko and comment simko and comment okay for book yeah um mouth feel right like like creaminess like what how do you get there what yeah well is well yeah how do you how do you how do you do that like as a brewer how do you achieve that and does this people are drinking this right now like um is this middle of the road is this above average range like what's what's good yeah like how do you get I would say this is middle of the road to above average especially this batch okay this batch is two days old yeah you're having it yeah yeah yeah it's very plush um but that's just a high protein percentage so blends of oats and wheat and things like that different types of oats different types of wheat um because you have to pay attention to the um the chains in the wheat the protein chains sure that some of our larger and smaller and you want to you want to make sure you're using the right that that's getting off of science you for me so well but but it's it's also important like I know I know he understand but but as a consumer like like may not I don't know why like um so you you are thoughtfully considering which oats to to to choose in your grain build in order to get that stickiness and yes and it also um proteins also contribute to the opaqueness um oh sure how for the opacity okay yeah so they'll contribute to how thick it is as well interesting okay and then and then the the the head and the and the lacing on the glass and all that is part of that created from that stickiness that it's funny I would say that's so you know more than you see you always say Brian know all this shit you know lacing is I get I get too excited but look at lacing on this look look at that look at this poor yeah yeah yeah yeah you're sick four sips you're lacing yeah yeah so a big boy yeah you're driving all right it's interesting I do I so Kyle is this you're around considered your flagship yep for sure all right awesome yeah I thought about doing it as a double because I love my doubles but it just wouldn't be you can do a version of it you're just drifting away from what would be flagship you know what I mean because now you're like oh eight eight percent now it's not approachable not everybody's gonna want to drink it no I I have an eight percent rule like I won't drink anything over eight and that's what takes away from that you don't want to put a beer that high because now you've taken away from what you're really trying to achieve yeah it's funny to say that because I do think not knocking anybody that does have a double is there your you don't know but but but you brew beer as your flagship don't change it and and that's what you you just mentioned comment blue comment he won't they won't touch that they make my verse no I bet I'm not doing it subtly well no he'll he'll also do tweaks he said this batch is is is better than ever yeah so yeah there's always tweaks to it of course yeah well you're you might know the blue comment blue comment will always be blue comment yeah comment week he did cold IPA he did twin but he'll won't he's not gonna do something with no and I imagine that's important like you have your flagship you do it and yeah and to I think you're right I Kyle you mentioned something like introductory like give me a beer from Little Willow how do I embrace them hot if I'm if I'm a novice or just entering them craft beer market which if you're not there yet we will talk offline you probably know us um it's important like yeah a nice approachable beer that's going to give you the nuances that you talk about grapefruit peach little bit cloudy little bit hazy nice malt feel this is what you can expect in a win hazy and I think it's important I think it's it's it's a good it gets you into it's yes it's the baseline yeah so then if you like this yeah maybe I should maybe I should try this one now try it now try it now try a good point yeah I think it's I love it I love what Brewers can do and but it's also not too much for someone who's like I really don't like IPAs yeah they still will no you drink it eight and a half percent finds you like oh point bang like wow that's that's that's slaps in the face yeah it does yeah yeah this doesn't do that right so other other what are your other year round or quarterly so that's not good yeah okay so now we have quarter okay so I've only had one year round that in here and I have one guaranteed repeat which is hazy days because that was the first beer ever brood um really go because of Brian really go because of right yeah yeah yeah yeah quarterly is that's a quarterly yeah so you have quarterly brews as well so every three peach coma yeah yeah yeah each count okay each comer's coming back as a 120 yeah okay so every every three months or so you can expect it quarterly one twenty yeah that well no willy goats quarterly yeah that one twenty did you know what that was quarterly 360 yeah right yeah I'm not good with math just brought math to it yeah I get that three times here yeah okay okay go ahead no we're good yeah no I love it please explain yeah it's man's playing to me keep on doing what you're doing like I this is gonna get side like now now that chugged I don't even know what you're on your own you're around I'm gonna confuse that but yeah other things what but my point is like you can like other quarterly beers you're gonna come off a little other you can count on it's just being there quarterly is not really so the only quarterly I have is willy goat it's called the wands of the the once really you can see you can see year round release once a month okay there'll be two IPAs a double in a single release once a month yeah and then there's gonna be like sporadic stuff throughout we got we got the brown ale it just came out the German Pilsner will be I love it soon the Berlin device that goes the the October Fest and maybe maybe something else I have a couple other ideas of things I love it I'm gonna try and you just took notes when you said yeah yeah the color beer yeah that's cool no no I I had I look at it all my dad you know it does a great color beer shelling well what logger to shelling I bet you can't you got here to get it I could I don't distribute it oh maybe not where you are yeah I saw one I saw the release I'm like oh this awesome I'm gonna get I'm gonna buy a whole bunch of this and then it was like oh you got to go to brewery it was good listen loggers OG old style loggers yeah sure sure love it shelling so that's a mass notch not not just really good really really really got OEC in here date Suarez is we should go there sometimes. Oh, do you want do you want lunch? Yeah That eliminates one brewery All right, I love it. This is wild though. Yeah collab. No, no Galaxy. Yeah, it's for you guys.
